- 1 tbsp. Pero Family Farms Mini Sweet Peppers, diced
- ¾ cup coconut milk
- ¼ cup peanuts
- ¼ cup green onions, thinly sliced
- 1 tbsp. curry powder
- ½ tbsp. sesame seeds
- Salt and pepper, to taste

- In a medium sauce pan add the coconut milk, curry powder and peanuts.
- Bring heat to medium-high and add the Butternut Veggie Spirals.
- Cook for 3 minutes, or until the squash is cooked to your desired texture.
- Remove from heat.
