What You Need

  • 6oz. bag Pero Family Farms English Peas, cooked
  • ¼ cup Red Onion, minced
  • ¼ cup Cheddar Cheese, shredded
  • 1 tbsp. Fresh Mint, minced

Light Yogurt Dressing

  • 2 tbsp. White Vinegar
  • ½ cup Plain Yogurt
  • 1 tbsp. Lemon Juice
  • 1 tsp. Honey
  • 1 tbsp. Fresh Mint, minced
  • 1 tbsp. Fresh Chives, minced
  • ¼ tsp. Garlic Powder
  • ½ tsp. Sea Salt
  • A pinch of Black Pepper
  • Optional to thin the dressing out with water

What You Need

  1. Cook the Pero Family Farms English Peas as directed on the bag. Once cooked, allow them to cool in a medium sized bowl before preparing the salad.
  2. In a separate small bowl, whisk together all of the ingredients for the Light Yogurt Dressing.  If the dressing needs to be thinned out to your liking, add 1 tbsp. of water and whisk.  Adjust seasoning, if necessary.
  3. Add the red onions, mint and cheese into the bowl with the cooled peas.
  4. Pour the dressing over the salad.
  5. Serve and enjoy
