What You Need

  • 8oz. bag Pero Family Farms Brussels Sprouts, quartered
  • 1 cup cooked Quinoa
  • 1 tbsp. Olive Oil
  • ¼ tsp. sea salt
  • ½ Red Grapefruit, peeled and chopped
  • ½ Navel Orange, peeled and chopped


  • 2 tbsp. Orange Juice
  • 1 tsp. Orange Zest, optional
  • ¼ cup Extra Virgin Olive Oil
  • 1 tsp. Apple Cider Vinegar or Champagne Vinegar
  • Salt and pepper

What You Need

  1. Heat olive oil in a sauté pan over medium heat. Once the oil is hot, carefully add the quartered brussels sprouts to the pan and add sea salt. Let the brussels sprouts cook for 8-10 minutes, stirring occasionally. Once the brussels sprouts are cooked and lightly browned, add them into a medium bowl with the cooked quinoa.
  2. Next, add the red grapefruit and navel orange to the bowl with the brussels sprouts and quinoa.
  3. In a separate bowl, whisk together the ingredients for the dressing. Pour the dressing over the dish and gently toss together to coat everything nicely.
