What You Need

  • 1 bag Pero Family Farms Organic Broccoli Florets
  • 2 TBLS Sesame Oil
  • ¼ cup Chopped Peanuts
  • 2 Scallions, minced
  • 1 TBLS Toasted Sesame Seeds
  • ½ TBLS Black Sesame Seeds

Peanut Dressing, makes 1 cup

  • ½ cup Creamy Peanut Butter
  • 2 TBLS Lime Juice
  • 2 TBLS Rice Vinegar
  • 1 TBLS Honey
  • 2 TBLS Soy Sauce
  • 1 Garlic Clove
  • Salt and Pepper, to taste

What You Need

  1. Preheat the oven to 425 degrees. Line a baking tray with parchment paper. Gently toss the broccoli florets with the sesame oil. Place the broccoli on the baking tray and roast for 10 minutes.
  2. While the broccoli is cooking prepare the peanut dressing. In a high speed blender or food processor blend together all the ingredients for the peanut dressing. Adjust seasoning if necessary.
  3. Once the broccoli has cooked while it is still warm place the broccoli into a bowl and ¼-1/3 cup of the dressing. Gently mix together.
  4. To serve garnish with chopped peanuts, scallions, and sesame seeds.
  5. Serve and enjoy!
