Ingredients
  • 16oz. bag Pero Family Farms Mini Sweet Peppers
  • 2 peaches, pitted and cut into 4 flat pieces
  • 1 loaf Italian Bread, cut thin on an angle
  • 1 ½ tbsp. white balsamic vinegar
  • 1 tbsp. olive oil
  • 1 tbsp. garlic, minced
  • 1 tbsp. basil, chopped
  • 1 tbsp. parsley, chopped
  • Salt and pepper to taste

Directions
  1. Preheat the grill to medium-high temperature.
  2. Place the peppers and peaches on the grill for about 2 minutes on each side.
  3. Next, roughly chop the peppers and peaches and add them to a mixing bowl.
  4. Add the garlic, basil, parsley, olive oil, vinegar, salt and pepper and mix well.
  5. Lightly grill the Italian bread pieces.
  6. Top bread slices evenly with the bruschetta mixture.
  7. Serve immediately and enjoy!
