MINI SWEET PEPPER Denver Omelet
6 Pero Family Farms Mini Sweet Peppers, diced
½ cup sour cream
½ cup milk
½ cup Pero Family Farms Riced Cauliflower
¼ cup parmesan cheese, shredded
¼ cup arugula
Salt and pepper, to taste
How to Make it
In a large bowl add the eggs, sour cream, milk, salt and pepper and mix well. Spray a 9” pie pan with non-stick spray then pour the egg mixture into the pan. Top with Mini Sweet Peppers, Riced Cauliflower, and cheese. Bake at 350 for 25 minutes or until the center is solid. Top with arugula and serve.
