Spring Lemon Zest Asparagus Salad

Nothing will get you in the mood for spring more than this colorful Zesty Lemon Asparagus & Mini Sweet Salad that is filled with flavor! Made with our fresh Asparagus, we also added our Mini Sweet Peppers for extra crunch and topped it off with a savory lemon zest.

What you need

Ingredients

10oz. Pero Family Farms Asparagus ½ cup Pero Family Farms Mini Sweet Peppers, cut into rings
 
1 cup couscous, cooked
 
½ cup radicchio, thin strips
 
¼ cup parsley, chopped
 
1 tbsp. lemon juice
 
1 tbsp. lemon rind, zest
 
1 tbsp. olive oil
 
Salt and pepper, to taste

Directions

  • Blanch the asparagus and add to a large mixing bowl.
  • Next add the Mini Sweet Pepper Rings, radicchio, parsley, lemon juice, lemon rind, olive oil, salt and pepper.
  • Mix well and serve over a bed of couscous.
