8oz. Mini Sweet Peppers seeded and cut into rings

6 eggs

Non-stick cooking spray, as needed

Salt and pepper to taste

Fresh Chives, for garnish

Directions

  • Preheat the oven to 375⁰F
  • Spray the sheet pan thoroughly with non-stick cooking spray
  • Carefully crack one egg at a time onto the sheet pan, spacing them out evenly.
  • Top eggs evenly with Mini Sweet Peppers.
  • Season with salt and pepper, to taste.
  • Carefully place the sheet pan in the oven and bake for 10 minutes or until the eggs and peppers are cooked to your desired texture. Garnish with fresh chives. 
  • Slice and serve!
