Roasted Tomato Green Bean Goat Cheese

This Roasted Tomato Green Bean and Goat Cheese recipe is a simple dish with complex flavors! Made with our Organic Green Beans and mixed with roasted tomatoes and goat cheese.

What you need
12 oz. Organic Pero Family Farms Organic Green Beans
2 tbls Olive oil
1 ½ cups Grape Tomatoes
2 oz. Goat Cheese
¼ cup Chopped Pecans
½ tsp Sea Salt
1/8 tsp Black Pepper or to taste
½ tsp lemon juice
What you need
Let’s Get Started
- Preheat the oven to 400 degrees and line a baking tray with parchment paper.
- Add the grape tomatoes into a bowl with 1 tablespoon olive oil, a few pinches of salt and one of pepper. Toss everything together. Place the tomatoes on to the baking tray and roast in the oven for 15 minutes until the tomatoes are just about to burst. Carefully remove the baking tray from the oven and set aside.
- To prepare the Green Beans, steam as directed on the package. Once the Green Beans are steamed place them in a bowl and add the roasted tomatoes. Add the remaining olive oil, lemon juice, salt, and pepper. Gently toss together the ingredients carefully as to not break the tomatoes.
- Garnish the side dish with chopped pecans and goat cheese.
- Serve and enjoy!
