8oz. Pero Family Farms® Mini Sweet Pepper Rings
2 eggs
3 redskin potatoes
1 cup kale, sliced into strips
½ cup chicken or turkey sausage, sliced
½ cup onions, sliced
2 cups water
1 tbsp. Olive Oil
Salt and pepper to taste

Directions
- In a medium sauce pan, bring water to a boil.
- Add potatoes, and bring back to a boil. Cook until fork can easily go through potato.
- Strain the potatoes and set aside.
- Heat the olive oil to medium high temperature in a large saute pan and add the sausage.
- Cook sausage until brown.
- Next, add onions, Mini Sweet Pepper Rings, potatoes and kale.
- Cook for 2-3 minutes on medium high.
- Add eggs to the pan and stir constantly until the eggs are cooked.
- Serve immediately and enjoy!
