What you need


1 bag Pero Family Farms Mini Sweet Pepper Rings

1 TBLS Olive oil

1 can low or no sodium Kidney Beans, rinsed and drained

1 can low or no sodium Northern Beans, rinsed and drained

½ cup Yellow Onion, minced

1 Garlic Clove, minced

1.25 cup Vegetable Broth

2 tsp Chili Powder

2 tsp Ground Cumin

1 tsp Sea Salt

A few pinches Black Pepper

Fresh cilantro for garnish (optional)

Let’s Get Started


  • In a dutch oven or soup pan heat olive oil over medium heat. Once hot add onions and garlic. Let this cook for 1-2 minutes, stirring occasionally.
  • Add the rinsed and drained beans to the pot and the chili and cumin powder. Stir and let this cook for 3-4 minutes on medium heat.
  • Add the Pero Family Farms Mini Sweet Pepper Rings, season the chili with salt and pepper, and pour in the vegetable stock. Bring this to a light boil. Once the vegetarian chili is at a boil cover the pot and reduce the pot to low heat. Let the chili cook for 12-15 minutes.
  • Serve immediately and garnish with fresh cilantro.
