2 tbsp. basil pesto

2 eggs

2 pieces of toast

Salt and pepper, to taste

1 tbsp. parmesan cheese, grated (optional)

Basil leaves, for garnish

Directions

  • In a large sauté pan, heat olive oil to medium-high temperature.
  • Add the Mini Sweet Peppers and cook for 1 minute.
  • Add the pesto to the pan and mix well.
  • Next, gently add the eggs on top of the peppers and pesto.
  • Cook eggs to your desired texture.
  • Place eggs and peppers over toast.
  • Garnish with Parmesan cheese and basil to serve.
