What You Need

  • 8oz. Pero Family Farms Mini Sweet Peppers, cut into thin strips
  • 2 tbsp. basil pesto
  • 2 eggs
  • 2 pieces of toast
  • Salt and pepper, to taste
  • 1 tbsp. parmesan cheese, grated (optional)
  • Basil leaves, for garnish

Directions
  1. In a large sauté pan, heat olive oil to medium-high temperature.
  2. Add the Mini Sweet Peppers and cook for 1 minute.
  3. Add the pesto to the pan and mix well.
  4. Next, gently add the eggs on top of the peppers and pesto.
  5. Cook eggs to your desired texture.
  6. Place eggs and peppers over toast.
  7. Garnish with Parmesan cheese and basil to serve.
