What you need

16oz. bag Pero Family Farms Mini Sweet Peppers

2 peaches, pitted and cut into 4 flat pieces

1 loaf Italian Bread, cut thin on an angle

1 ½ tbsp. white balsamic vinegar

1 tbsp. olive oil

1 tbsp. garlic, minced

1 tbsp. basil, chopped

1 tbsp. parsley, chopped

Salt and pepper to taste

Directions

  • Preheat the grill to medium-high temperature.
  • Place the peppers and peaches on the grill for about 2 minutes on each side.
  • Next, roughly chop the peppers and peaches and add them to a mixing bowl.
  • Add the garlic, basil, parsley, olive oil, vinegar, salt and pepper and mix well.
  • Lightly grill the Italian bread pieces.
  • Top bread slices evenly with the bruschetta mixture.
  • Serve immediately and enjoy!
