Green Bean & Avocado Corn Salad

We love a vegetable loaded salad for an easy weeknight dinner weeknight dinner. This recipe is simple, colorful and fresh! Pair with your favorite protein for a complete and satisfying meal.

12oz. Pero Family Farms Organic Snipped Green Beans
½ cup grape tomatoes, halved
½ cup corn
½ cup red onion, thinly sliced
½ cup avocado, diced
1 tbsp. olive oil
½ tbsp. lemon juice
Salt and pepper, to taste
- Preheat oven to 400⁰F.
- Place the Green Beans on a baking tray and drizzle evenly with 1 tbsp. olive oil.
- Season with salt and pepper, to taste.
- Place tray in oven and roast for 15 minutes or until the Green Beans reach your desired texture.
- In a large mixing bowl, add the roasted Green Beans, tomatoes, corn, onion, avocado, and lemon juice.
- Mix well and serve!
