½ cup corn

½ cup red onion, thinly sliced

½ cup avocado, diced

1 tbsp. olive oil

½ tbsp. lemon juice

Salt and pepper, to taste

Directions

  • Preheat oven to 400⁰F.
  • Place the Green Beans on a baking tray and drizzle evenly with 1 tbsp. olive oil.
  • Season with salt and pepper, to taste.
  • Place tray in oven and roast for 15 minutes or until the Green Beans reach your desired texture.
  • In a large mixing bowl, add the roasted Green Beans, tomatoes, corn, onion, avocado, and lemon juice.
