French Country Salad with Mini Sweet Peppers

START TO FINISH
12oz. Pero Family Farms Snipped Green Beans, blanched
2 cups Pero Family Farms Mini Sweet Pepper Rings
1 cup golden beets, roasted and cubed
1 cup baby spinach
½ cup pine nuts
2 tbsp. goat cheese crumbles
1 tbsp. olive oil
1 tbsp. white balsamic vinegar
Salt and pepper to taste
- Blanch the Snipped Green Beans and transfer to a large mixing bowl.
- Add the Mini Sweet Pepper Rings, roasted golden beets, pine nuts, spinach, olive oil, vinegar salt and pepper.
- Mix well and top with goat cheese.
- Serve immediately!
