1 ¾ cup vegetable stock

1 cup Pero Family Farms English Peas

1 cup short grain rice

½ cup pumpkin, cleaned and diced into small pieces

½ cup mushrooms, sliced

1 tbsp. olive oil

½ tbsp. thyme leaves

½ tbsp. garlic, minced

Salt and pepper to taste

Directions

  • Preheat a large sauté pan with olive oil to medium-high temperature.
  • Add the mushrooms, pumpkin, peas, and garlic to the pan.
  • Cook for two minutes, stirring constantly. Next, add the rice to the pan and mix thoroughly.
  • Add ¼ cup of vegetable stock stirring until the stock is absorbed.
  • Repeat this step until all the stock is absorbed and the rice is cooked to your desired texture.
