What You Need
Ingredients
- Pero Family Farms Butternut squash, chunks
- 1lb beef shank, cut into small pieces
- 2 cups potato, peeled, diced
- 1 ½ cups Pero Family Farms French beans, chopped
- 1 ½ cups Pero Family Farms Vegetable Slaw
- 1 ½ cups Pero Family Farms, Mini Sweet Peppers, cut into rings
- 1 cup macaroni
- 1 cup green onion, sliced into rounds
- ½ cup celery, diced
- ½ cup cilantro, rough chop
- ½ cup red onion, diced
- 2 tbsp. garlic, minced
- 2 tbsp. lime juice
- 1 scotch bonnet pepper
- 1 Sazon packet
- 4 Maggie cubes
- Salt and pepper to taste

Directions
- Bring 2 cups of water to a boil
- Add the butternut squash and cook until completely tender
- Drain the squash and puree until smooth
- In a large soup pot add the olive oil and heat to medium-high temperature
- Next add the beef pieces and cook for 1 minute
- Add the lime juice
- Next add the red onion, green onion, celery, Mini Sweet Peppers and stir occasionally for 2 minutes
- Add the vegetable slaw, French beans, garlic, and potato
- Add the sazon packet and 4 Maggie cubes
- Add 4 cups water, stir and cover
- Lower the heat to medium, continue cooking for 30 minutes stirring occasionally
- Next add the pureed squash and mix well
- Add the macaroni and lower the heat to low cook for 30 minutes stirring occasionally
- Add the fresh cilantro and ½ scotch bonnet pepper and stir
- Serve immediately
